The Thigh's the Limit, C is for Cooking

Today I tried two recipes.  One from the Sesame Street cookbook, C is for Cooking and another recipe from the Looneyspoons Collection.  

Lunch, C is for Cooking: Cowboy Elmo's Fastest Mac n Cheese in the West pg. 88.  The recipe calls for American Cheese slices.  For one I would not eat processed cheese slices.  They are horrible.  There is no way I will feed my child that.  I shredded down old cheddar cheese.  It also calls for vegetable oil.  My honest opinion.  I did not like it.  All I can taste is the vegetable oil.  It tasted nasty!! I had some family over, my husband everyone else enjoyed it.  If I try it again I might use butter instead.  I am not rushing to try this one again anytime soon.  Unfortunately I did not get any pictures of this dish.



Looneyspoons Collection: The Thigh's the Limit pg. 155.  I do not eat thighs.  I am a white meat eater.  I prefer the chicken breast.  So I just did the recipe with both chicken breasts and thighs.  The only thing I did not do was marinade it for 4 hours.  I really enjoyed it.  Next time I will try marinading it overnight.  If I loved the flavor and I did not marinade it for less than 5 mins, I can only imagine how good it will taste then.  We are definitely going to have this again for dinner.

All You Need is Loaf

Today I tried the recipe All You Need is Loaf, pg. 235.  It is Meatloaf.  I really wondered, do I make myself a piece of chicken or do I be daring and just try it.  Normally I do not eat ground beef.  To be honest I am a very picky eater.  Most of the time is all I eat is chicken.  It gets kind of boring. So today I decided to bite the bullet and eat it! 

It was amazing! The best meatloaf I have ever had.  Everyone ate it! I asked them all, is it a make again recipe? They all said yes!

Looneyspoons Collection Cookbook Janet and Greta Podelski

Well it has been a long time since I have posted on this blog.  My sister in law has been cooking from this cookbook.  I tried one recipe that she shared with me and it was fantastic.  So I finally went out and bought it.  You can get it at Costco for $19.99.  Today I tried 2 recipes, Simply Orange Chicken pg. (141) and Darth Taters (pg. 271).

 Orange Chicken:

It was so good!! The only thing I would change though is I would bake it in the oven and then the last 15 mins put the sauce in.  Another option I might try is sear it in the frying pan, bake it in the oven and then add the sauce in. My reason is that I really struggle to cook the chicken properly in the frying pan.  My family really enjoyed it.  Even toddler approved!

Darth Taters:

There is nothing I would change about that recipe! My daughter gobbled them up! I think I might have overcooked it just a little.  Regardless it was fantastic!!!

We will be eating these again!!
